WHEN WAS THE LAST TIME YOU INDULGED IN VELVETY CHOCOLATE TRUFFLES? WERE THEY GUILT-FREE? THESE ARE. AND YOU DESERVE IT.

GATEAU COCOON TOP & TRAPEZE MAXI DRESS

RAW CACAO TRUFFLES
Easy. Healthy. Vegan. Outrageous. The cure for chocolate cravings!

Toss in a food processor and pulse until you have a creamy fudge consistency:
1 C PITTED MEDJOOL DATES *make sure they are nice and moist
2 C WALNUTS
1/2 C COCONUT WATER *or H2O
8 T RAW CACAO POWDER *more for rolling if you aren’t a coconut fan

Roll into balls; place on plate and chill until almost ready to eat. Before serving, roll in UNSWEETENED DRIED COCONUT FLAKES—or if preferred, simply roll in cacao powder for a classic truffle look. (If you do this step in advance, the powder will eventually absorb into the truffle, losing its pretty powdery appearance. That’s why I skip this step until ready to serve.) Plate as is or drop into mini cupcake cups.

HEALTH BENEFITS:

The skinny on dates: Nutrient dense. Iron rich. High fiber. Anti-inflammatory.
The scoop on walnuts: Huge in omega-3s—they also support healthy cognitive function.

Coconut praise: Coconut water is good for the kidneys and urinary tract. Coconut meat is a superstar, with vitamins A, B & C + niacin, thiamine, riboflavin and iron. AND it is also a healthy fat. It IS saturated, but it’s long-chain saturated fats you need to be concerned with. Medium-chain saturated fat in coconut is easy to digest and converts to energy quickly, so it isn’t stored as fat. 

THE CHOCOLATE SHOPPE GUIDE:

CACAO: Superfood status. Packed with flavonoids. This stuff is pure, unadulterated chocolate in its raw, original state. Cacao beans are made into cacao powder or cocoa powder. The bean contains a negligible amount of natural sugar + theobromine, a substance related to caffeine. For cocoa powder, very high temps are applied to the cacao beans, which produces a smooth, sweet taste. But it loses nutritional value in the process. Cacao beans destined to become powder and nibs aren’t roasted at these high temps—but processed at low temps, then milled into a powder. Cacao powder is bitter, but retains more of the bean’s nutritional integrity. This CACAO MASTERPIECE won’t give you a theobromine buzz but it will make you swing...

TRUFFLE: A chocolate truffle is traditionally made with a ganache center, coated in chocolate, cocoa powder, coconut or nuts. Their name derives from a resemblance to truffles, edible fungi of the genus Tuber. These bite-sized chocolate confections can have many ingredients, only limited to the imagination of the maker. But in their purest, minimalist, most traditional form, they require just two components: chocolate and cream. Here, we’ve ADDED GINGER.

GATEAU: The Chocolate Shoppe’s CHIC STRIPES remind me of layer cake… A Gateau is typically the most elaborate kind, comprised of many rich layers of buttercream or ganache.

NOUGAT: We love the creamy hue of these COZY FRENCH TERRY STYLES, reminiscent of soft, chewy nougat, traditionally studded with nuts or fruit; also marketed as the fluffy layer inside a candy bar.

PRALINE: Developed in New Orleans in the early 19th century, this French confection is crafted by boiling nuts in sugar and grinding the mixture for filling or molding into chocolates. This WAFFLE KNIT WONDER is drenched in a soft brown hue reminiscent of praline, a chocolate box stand-by.

LAVA: It seems apropos to name our BLACK CREATIONS after the restaurant fave for most dramatic presentation, Molten Lava Cake, typically made from dark chocolate with a warm, flowing center.

BUTTERCREAM: Used for filling, coating or decorating many desserts, this sinful whip is mostly butter and sugar, with vanilla as a common flavor profile. Now you can WRAP YOURSELF in it.
